MINT AND LIME NOODLE SALAD

Preparation Method :
- Pour boiling water over the noodles and leave to stand for 3 minutes or according to packet instructions. Drain well and set aside to cool.
- Add the lime juice to the noodles and season well. Add the apples, celery, mooli and mint and toss together. Transfer to a serving bowl and sprinkle over the alfalfa sprouts. Serve immediately.
INGREDIENTS
- 200 grams beancurd noodles
- 4 tablespoon lime juice
- Salt and freshly ground black pepper
- 4 Granny Smith apples, cored and chopped
- 4 celery sticks, sliced
- 150 grams mooli, chopped
- 4 tablespoon chopped fresh mint
- 150 grams alfalfa sprouts, to garnish
