HERBY CREAM SALAD

Preparation Method :

  • Break the cauliflower into 4 cm (1 ½ ") florets; cook them in boiling water until done, but still crisp.
  • Remove them with a slotted spoon and plunge them in cold water for a few minutes; drain
  • In the same water in which you boiled the cauliflower, cook the carrots; then drain them, plunge them in cold water, and drain again.
  • Place the cauliflower, carrots and capsicum in a bowl.
  • In a separate bowl, mix together the dressing ingredients until well combined. Pour the dressing over the vegetables toss well, place in a serving dish and chill until it is time to serve.

INGREDIENTS

  • ½ large cauliflower
  • 150 grams carrots, cut into juliennes
  • 2 large capsicums, thinly sliced

For the dressing

  • 200 ml sour cream
  • 100 ml mayonnaise
  • Salt and pepper to taste
  • 1 tablespoon mint (pudina), finely chopped
