Preparation Method :
- Wash the rocket leaves and dry them. Refrigerate till they are chilled.
- Toss chilled rocket leaves in a bowl along with sufficient salt, pepper and sesame oil.
- Arrange them on a serving plate.
- Place sliced apple, guava, cucumber, cottage cheese and alfalfa sprouts on the top of the rocket leaves.
- Combine date pulp along with tamarind pulp, jaggery and black salt in a bowl and mix well until jaggery dissolves.
- Drizzle the prepared dressing with dates and tamarind pulp over rocket leaves and sliced fruits.
- Refrigerate and serve chilled.

- 12 to 14 rocket (arugula) leaves
- 1 large apple, diced
- 1 large guava, diced
- 1 small cucumber, peeled, cut in half lengthwise and sliced
- 1 tablespoon crumbled cottage cheese (paneer)
- 1 tablespoon alfalfa sprouts Dressing
- ½ teaspoon pepper
- 1 teaspoon IDHAYAM Sesame oil
For Dressing:
- 3 dates, boiled and pulp extracted
- 2 teaspoons grated jaggery
- 2 teaspoons tamarind pulp
- Black salt to taste
