GRILLED AUBERGINE SALAD

Serves :

30 minutes

Preparation Method :

  • Cut the aubergine into slices and the onion into slices. Keep the onion rings in one piece by inserting 2 cocktail sticks from the outer ring to the centre. Put the aubergine and onion in a large bowl.  
  • Combine the olive oil, red pepper flakes, cumin and sesame seeds, garlic, salt and pepper. Pour the mixture over the aubergine and onion slices, turning to coat. Marinate for at least 30 minutes.
  • Meanwhile, mix together the yogurt, coriander, lime zest, garlic, salt and pepper. Leave to stand.
  • Place the vegetables on a rack under a hot grill for about 5 minutes-each side, until slightly blackened. Allow to cool.
  • Remove the cocktail sticks from the onion slices and cut each slice in 4. Cut the small aubergine slices in half and the larger ones in 4.
  • Mix the onion and aubergine in a serving bowl and sprinkle with the lime juice. Carefully fold in the yogurt mixture. Leave to stand at room temperature for about 1 hour to allow the flavours to develop.
  • Garnish with lime slices and coriander leaves. Serve with warm naan bread.

INGREDIENTS

  • 4 small aubergines
  • 2 red onions
  • 200 ml sesame oil
  • 1 teaspoon dried red pepper flakes
  • 1 teaspoon cumin seeds
  • 1 teaspoon sesame seeds
  • 4 garlic cloves, chopped very finely
  • 1 teaspoon salt
  • Pepper to taste
  • 4 tablespoon lime juice

Dressing

  • 200 ml Greek yogurt
  • 4 tablespoon finely chopped coriander
  • Grated zest of ½ lime
  • 2 garlic clove, chopped very finely
  • Salt and pepper

Garnish

  • Slices of lime
  • Coriander leaves
