DAIKON AND RED KIDNEY BEAN SALAD

Serves :

Preparation Time :
15 minutes

Preparation Method :

  • Lay the washed and dried lettuce leaves on a shallow oval dish.
  • Place half the onion rings over the lettuce and the mooli, cucumber, carrots and tomatoes.
  • Sprinkle half the salt over the top. Spoon over the red kidney beans and arrange the remaining onion rings on top.
  • Sprinkle on the remaining salt, paprika and the lemon juice. Place the lime wedges around the dish, and serve.

INGREDIENTS

  • 2 medium tomatoes, sliced
  • 9 leaves Iceberg lettuce    
  • ½ teaspoon salt
  • 9 onion rings    
  • 100 grams cooked kidney beans
  • 250 grams mooli, peeled and thinly sliced    
  • ½ teaspoon paprika
  • 1 tablespoon lemon juice
  • ¼  cucumber, sliced    
  • 6 lime wedges to garnish
  • 3 medium carrots, peeled and sliced
