CREAMY POTATO SALAD

Preparation Method :
- Cut the flesh of the seeded peppers into small pieces.
- Finely chop the celery, shallot and spring onions and chili flakes , discard the seeds.
- Cook the peeled potatoes in salted water until tender. Drain and cut into cubes.
- Add the vegetables to the potatoes together with the herbs and garlic.
- Mix together the cream, mayonnaise, mustard and sugar in a small bowl.
- Pour the dressing over the salad and stir gently to coat evenly.
- Garnish with the chopped chives and serve.

- 2 tablespoon single cream
- 3 tablespoon mayonnaise
- 1 teaspoon prepared mild mustard
- 1½ teaspoon granulated sugar
- 1 kg potatoes
- 2 red peppers
- 2 celery sticks
- 1 shallot
- 1 fresh green chilli, flakes
- 2 spring onions
- 1 garlic clove, crushed
- 2 teaspoon finely sliced fresh chives
- 2 teaspoon finely chopped fresh basil
- 1 tablespoon finely chopped fresh parsley
- Salt
- Chopped fresh chives, to garnish
