CARROT AND ORANGE SALAD
                            A fruit and a vegetable, which are made for each other, form the basis of this fresh-tasting salad.

                    Preparation Method :
- Peel the carrots and grate them into a large bowl.
 - Cut a thin slice of peel and pith from each end of the orange.
 - Place the cut side down on a plate, and cut off the peel and pith in strips.
 - Remove any remaining pith. Cut out each segment leaving the membrane behind.
 - Squeeze the remaining juice from the membrane into a bowl.
 - For the dressing,mix the olive oil, lemon juice, and orange juice from the bowl.
 - Season the mixture with a little salt and pepper to taste, and granulated sugar if you like.
 - Toss the orange segments together with the carrots and pour the dressing over.
 - Sprinkle the salad with the pistachio nuts or pine nuts before serving.

- 450 grams carrots
 - 2 large oranges
 - 1 tablespoon olive oil
 - 2 tablespoons lemon juice
 - Pinch of granulated sugar (optional)
 - 2 tablespoons chopped pistachio nuts or toasted pine nuts
 - Salt and ground black pepper
