BULGUR WHEAT AND FRUIT SALAD

Preparation Method :
- Soak the cracked wheat in water for 15 minutes, then strain.
- Push each pepper on to a fork and, one at a time, roast directly on a flame.
- Put the soaked wheat into a salad bowl, and stir in the onion and garlic.
- Run water on the charred peppers and then remove the burnt skin. Cut the flesh into small pieces and add to the salad bowl.
- Stir in the tomatoes and parsley, then add the salt, white pepper and sugar and mix. Add the lemon juice, apple and mint leaves.
- Tear up the Iceberg lettuce and add. Toss well.
- Add the oil, toss again and serve immediately.
INGREDIENTS
- 500 grams bulgur wheat
- 4 medium-size red peppers
- 2 medium-size yellow pepper
- 2 medium-size onion, sliced
- 6 garlic cloves, thinly sliced
- 4 medium-size tomatoes, seeded and diced
- 2 tablespoon chopped fresh parsley
- 1 teaspoon salt
- Ground white pepper to taste
- Pinch of sugar
- 2 tablespoon lemon juice
- 2 medium-size apple, diced
- 6 tablespoons finely chopped fresh mint leaves
- A few leaves of Iceberg lettuce
- 2 tablespoon sesame oil
