BAKED POTATO SALAD

Serves :

Preparation Time :
15 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Preheat oven to 190 degree C/ 375 degree F/ Gas mark 5. Bake the potato until just tender, but firm to bite.
  • Rinse under cold water, drain and cool.
  • Combine potato with oil, seeds, spices, garlic and juice in baking dish.
  • Bake for 15-20 minutes or until potato turns brown.
  • Sprinkle with coriander and serve.

INGREDIENTS

  • 1 kg medium potatoes, chopped
  • 2 tablespoons lemon juice
  • 50 ml peanut oil  
  • ½ teaspoon sweet paprika
  • ½ teaspoons turmeric
  • ½ teaspoon chilli flakes
  • 1 teaspoon black mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground cumin
  • 1 clove garlic, crushed
  • Salt, to taste
  • 25 grams chopped fresh coriander
