BAKED POTATO SALAD

                    Preparation Method :
- Preheat oven to 190 degree C/ 375 degree F/ Gas mark 5. Bake the potato until just tender, but firm to bite.
- Rinse under cold water, drain and cool.
- Combine potato with oil, seeds, spices, garlic and juice in baking dish.
- Bake for 15-20 minutes or until potato turns brown.
- Sprinkle with coriander and serve.
INGREDIENTS
- 1 kg medium potatoes, chopped
- 2 tablespoons lemon juice
- 50 ml peanut oil
- ½ teaspoon sweet paprika
- ½ teaspoons turmeric
- ½ teaspoon chilli flakes
- 1 teaspoon black mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon ground cumin
- 1 clove garlic, crushed
- Salt, to taste
- 25 grams chopped fresh coriander
