AROMATIC NOODLE SALAD

Preparation Method :
- Cook the noodles in boiling water for 4 minutes or according to packet instructions. Drain, rinse under cold running water and drain well. Toss with the oil until it coats the noodles evenly.
- Crush the Sichuan peppercorns and black peppercorns together. Combine these with the crushed star anise. Stir this spice mix through the noodles until evenly distributed.
- Gently mix in the bean sprouts, lychees and star fruit. Sprinkle over the soy sauce, chervil and lemon juice and toss gently. Serve cold, garnished with satsuma slices.
INGREDIENTS
- 250 grams soba noodles
- 2 tablespoon sesame oil
- 5 teaspoon Sichuan peppercorns
- 2 teaspoon black peppercorns
- 4 teaspoon star anise seeds, crushed
- 150 grams bean sprouts
- 500 grams canned lychees, drained and halved
- 2 star fruit, thinly sliced
- 2 teaspoon soy sauce
- 4 tablespoon chopped fresh chervil
- 2 tablespoon lemon juice
- Satsuma slices, to garnish
