AROMATIC NOODLE SALAD

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Cook the noodles in boiling water for 4 minutes or according to packet instructions. Drain, rinse under cold running water and drain well. Toss with the oil until it coats the noodles evenly.
  • Crush the Sichuan peppercorns and black peppercorns together. Combine these with the crushed star anise. Stir this spice mix through the noodles until evenly distributed.
  • Gently mix in the bean sprouts, lychees and star fruit. Sprinkle over the soy sauce, chervil and lemon juice and toss gently. Serve cold, garnished with satsuma slices. 

INGREDIENTS

  • 250 grams soba noodles
  • 2 tablespoon sesame oil
  • 5 teaspoon Sichuan peppercorns
  • 2 teaspoon black peppercorns
  • 4 teaspoon star anise seeds, crushed
  • 150 grams bean sprouts
  • 500 grams canned lychees, drained and halved
  • 2 star fruit, thinly sliced
  • 2 teaspoon soy sauce
  • 4 tablespoon chopped fresh chervil
  • 2 tablespoon lemon juice
  • Satsuma slices, to garnish
