TOMATO, CUCUMBER AND ONION RAITA

Preparation Time :
5 minutes

Preparation Method :

  • Add the cucumber cubes to the yogurt with the other vegetables.
  • Season it with salt, black pepper and cumin powder, stir in the fresh mint and coriander leaves. Sprinkle over the chilli and serve chilled.

INGREDIENTS

  • 350 ml low-fat yogurt, chilled and whisked
  • 1 tomato, diced
  • 1 red onion, diced
  • 1 cucumber, peeled, sliced and cut into very small cubes
  • ½ teaspoon roasted cumin powder
  • ¼ teaspoon red chilli powder
  • 2 tablespoon chopped fresh mint or coriander
  • Salt and freshly ground black pepper to taste
