- Add the cucumber cubes to the yogurt with the other vegetables.
- Season it with salt, black pepper and cumin powder, stir in the fresh mint and coriander leaves. Sprinkle over the chilli and serve chilled.
INGREDIENTS
- 350 ml low-fat yogurt, chilled and whisked
- 1 tomato, diced
- 1 red onion, diced
- 1 cucumber, peeled, sliced and cut into very small cubes
- ½ teaspoon roasted cumin powder
- ¼ teaspoon red chilli powder
- 2 tablespoon chopped fresh mint or coriander
- Salt and freshly ground black pepper to taste
