CUCUMBER AND TOMATO RAITA

Preparation Method :
- Add the roasted cumin powder, mint leaves, salt and pepper with the yogurt. Set aside.
- Gently squeeze out any water from the cucumber and separate the grated strands into a serving bowl.
- Add the tomatoes and fold in the yogurt mixture.
- Sprinkle with a pinch of chilli and garnish with fresh mint leaves.
- Cover and refrigerate until ready to serve. Serve with any spicy meal.
INGREDIENTS
- 350 ml natural yogurt, whisked
- ¼ cucumber, peeled and grated
- 2 tablespoon finely chopped fresh mint leaves
- 2-3 cherry tomatoes, finely chopped
- Salt and freshly ground black pepper, to taste
- ½ teaspoon cumin seeds, dry roasted, coarsely ground
- A pinch of chilli powder
