CUCUMBER AND MANGO RAITA

- Sprinkle the cucumber with the salt and drain for 30 minutes.
- Chop the mango flesh and mix with the drained cucumber and remaining ingredients.
- Leave to stand for 1 hour before serving.
INGREDIENTS
- 100 grams peeled and finely chopped cucumber
- 1 teaspoon salt
- 2 large ripe mango
- 300 ml set yogurt
- 4 spring onions, green part included, chopped finely
- 4 tablespoon lime juice
- Pepper to taste
