RED PEPPER AND CHICKEN SALAD

Preparation Method :
- Heat the oil in a large frying pan, add the chicken strips and red pepper and fry, stirring frequently, for 10 minutes or until tender.
- Whisk the dressing ingredients until thickened. Tear the lettuce leaves and put in a large salad bowl.
- When the chicken and pepper strips are tender, remove them with a slotted spoon and place on top of the lettuce.
- Pour the dressing into the pan, increase the heat to high and stir until sizzling.
- Pour the hot dressing over the salad and toss to combine.
- Serve immediately, accompanied by good, crusty French bread.
INGREDIENTS
- 4 tablespoons Cooking oil
- 750 grams chicken breast fillets, cut diagonally into thin strips
- 2 red pepper, cored, deseeded and cut lengthways into thin strips
- 4 Little Gem lettuces, leaves separated
Dressing
- 5 tablespoons extra virgin olive oil
- 4 tablespoons lemon juice
- 3 garlic clove, crushed
- 2 teaspoon Dijon mustard
- Salt and pepper
