MILLET SALAD WITH MANGO AND CORIANDER

Preparation Method :
- Heat the oil in frying pan over medium heat and sauté millet briefly.
- Bring water to the boil in a saucepan over medium-high heat. Add millet and salt.
- Return to the boil, reduce heat to low, cover and simmer until millet is tender and water is absorbed, about 20 minutes. Remove millet to a large platter and spread in a thin layer to cool.
- Combine mango, finely chopped coriander, and lime juice in a bowl. Fluff millet with a fork then add it to bowl and toss to mix.
- Divide the salad among 4 plates and garnish with a sprig of coriander. Serve at room temperature.

- 200 grams millet
- 2 large mango, peeled, pitted, and cut into 12 mm dice
- 30 grams finely chopped fresh coriander, plus sprigs for garnish
- 4 sun-dried tomatoes, chopped
