Preparation Method :
- Preheat a grill pan or barbecue on high. Whisk the lemon juice, garlic, chopped cilantro, sugar, and oil in a small bowl. Season with salt and pepper.
- Grill the chicken until cooked through,10 minutes on each side. During cooking, turn the chicken and baste with half the lemon and oil mixture.
- Toss the beans, arugula, and remaining lemon and oil mixture in a bowl. Add the chicken and toss gently. Serve warm.
INGREDIENTS
- 100 ml freshly squeezed lemon juice
- 5 cloves garlic, finely chopped
- 4 tablespoons chopped fresh cilantro
- 2 tablespoon brown sugar
- 150 ml sesame oil
- Salt and freshly ground black pepper
- 3 boneless skinless chicken breasts, sliced
- 500 grams white kidney or cannellini beans, drained
- 200 grams baby arugula (rocket) leaves
