CHICKEN BURGERS WITH OLIVE BUTTER

Preparation Method :
- Mix the olive paste, butter, and garlic in a small bowl. Place the mixture on a sheet of aluminum foil and shape into a log. Wrap in the foil and put in the freezer.
- Place the chicken in a bowl with the shallot and thyme. Season with salt and pepper. Divide the mixture into 4-6 portions and shape into burgers.
- Fry the burgers in the oil in a large frying pan over medium-high heat until cooked, 5 minutes on each side.
- Put the burgers on a bed of arugula and garnish with the olives. Slice the frozen butter and place on top of the burgers. Serve hot.

- 150 grams black olive paste
- 150 grams butter, at room temperature
- 2 clove garlic, finely chopped
- 1.5 kg ground (minced) chicken
- 2 shallots, finely chopped
- 5 tablespoons finely chopped fresh thyme
- Salt and freshly ground black pepper
- 100 ml sesame oil
- 150 grams arugula, to serve
- Whole black olives, to serve
