CHICKEN & AVOCADO SALAD

- Place the chicken in a mixing bowl with the onion, apple, walnuts and sultanas.
- Add the sliced avocados to the chicken mixture.
- Mix the dressing ingredients together, pour over the chicken and avocado mixture and stir well.
- Place the salad leaves on four plates and top with the chicken and avocado mixture.
- Serve the salad sprinkled with chopped dill.
INGREDIENTS
- 500 grams boneless, skinless cooked chicken, shredded
- 2 small red onion, thinly sliced
- 2 small red apple, thinly sliced
- 50 grams walnuts, roughly chopped
- 2 tablespoon sultanas
- 4 avocados, peeled, stoned and sliced
Dressing
- 2 tablespoon French mustard
- 5tablespoons olive oil
- 2 tablespoon white wine vinegar
- 2 teaspoon caster sugar
- 2garlic clove, crushed
- 2teaspoon chopped thyme
To Serve
- 2 bag of mixed salad leaves
- 2 tablespoon chopped dill
