- To make the dressing, put all the ingredients into a small bowl and beat with a wooden spoon until smooth.
- Put the chicken pieces into a large bowl. Using a small sharp knife, peel the grapefruit and oranges, taking care to remove all the pith.
- Working over a bowl to catch the juices, segment the flesh, set the juice aside.
- Add the citrus fruit to the chicken with the cucumber and fennel. Toss lightly to combine.
- Divide the salad leaves between four individual plates and arrange the chicken mixture on top.
- To serve, stir the reserved citrus juices and the pink peppercorns, if using, into the dressing.
- Pour over the salad.
INGREDIENTS
- 500 grams boneless, skinless smoked chicken, cut into chunks
- 2 pink grapefruit
- 4 small oranges
- 1 cucumber, thinly sliced
- 2 small fennel bulb, trimmed and thinly sliced (optional)
- 100 grams frise
- 100 grams lamb's lettuce or watercress
- Pink peppercorns (optional)
- Salt and pepper
Yogurt Dressing
- 300 ml plain yogurt
- 2 tablespoon lemon juice
- 2 teaspoon clear honey
- 1 teaspoon Dijon mustard
- Salt and pepper
