- First make the dressing. Put all the ingredients into a screw top jar and shake vigorously until well combined.
- Tear the lettuce into bite-sized pieces and place them in a large salad bowl with the mixed herb sprigs. Toss together lightly.
- Add all the remaining ingredients, except the dressing, and salt and pepper to taste.
- Just before serving, spoon over the dressing and toss lightly.
INGREDIENTS
- 2 small lettuce, separated into leaves
- 50 grams mixed herb sprigs
- 1 cucumber, thinly sliced
- 50 grams walnut pieces
- 500 grams cooked chicken, diced
- 200 grams smoked ham, cut into strips
- 150 grams cheese, crumbled
- Seedless grapes, halved (optional)
- Salt and pepper
French dressing
- 4 tablespoons red or white wine vinegar
- 4 garlic cloves, crushed
- 4 teaspoons Dijon mustard
- 1 teaspoon caster sugar
- 10 tablespoons olive oil
- Salt and pepper
