CELERY AND TURKEY SALAD

Preparation Method :
- Combine celery, turkey, parsley, spring onion, cranberries, yoghurt, and mayonnaise in a bowl and mix well. Season with salt and pepper.
- Mix again and let stand at room temperature for 30 minutes or refrigerate for up to 3 hours for flavours to mingle.
- To serve, place a lettuce leaf on each of 4 chilled salad plates and arrange the salad on each leaf.

- 500 grams finely chopped celery
- 500 grams coarsely chopped cooked turkey
- 25 grams finely chopped fresh flat-leaf parsley
- 2 spring onion, finely chopped
- 2 Tablespoon dried cranberries
- 100 grams natural low-fat yoghurt
- 4 Tablespoon mayonnaise
- 6 large leaves butter lettuce
