Preparation Method :
- Wash and drain the rice and lentils, Prepare all the vegetables and Set aside.
- Heat the ghee or butter in a heavy-based saucepan and fry the onions along with the onion seeds, fresh coriander and green chillies for about 2 minutes.
- Add in all the vegetables, lentils, salt and all the spices. Fry these over a medium heat for a further minute.
- Add the rice and fry for further 20 seconds. Add the water, cover the pan with a tight-fitting lid and lower the heat.
- Cook for 20 minutes or until the rice and lentils are cooked.
- Let it stand for about 5 minutes and serve hot with a raita.

- 30 grams frozen peas
- 30 grams sweetcorn
- 30 grams diced red pepper
- 500 grams basmati rice
- 60 grams masoor dhaal
- ½ teaspoon diced and crushed ginger root
- ½ teaspoon crushed garlic
- 120 grams ghee or unsalted butter
- 1 medium onion, peeled and sliced
- ¼ teaspoon onion seeds
- 1 tablespoon chopped fresh coriander
- 2 green chillies, chopped and deseeded
- ¼ teaspoon turmeric
- 1½ teaspoons salt
- 700 ml water
