RICE AND PEAS

25 minutes

Preparation Method :

  • Heat oil in large saucepan; add cloves, cinnamon, cardamom and seeds. Stir for a minute. Stir in turmeric; stir for about 2-3 minutes.
  • Stir in the peas with the stock and rice; bring to boil. Reduce heat, simmer to low flame, cover and cook for about 12-15 minutes or until all liquid is absorbed and rice is tender.
  • Remove and discard cinnamon, cloves and cardamom before serving.

INGREDIENTS

  • 300 grams long-grain rice, rinsed, soaked and drained  
  • 45 grams fresh or frozen peas
  • 750 ml stock
  • 2 tablespoon IDHAYAM sesame oil
  • 4 whole cloves
  • 1 cinnamon stick
  • 4 cardamom pods, bruised
  • 1 teaspoon cumin seeds
  • Salt, to taste
  • ½ teaspoon ground turmeric
