MOONG DHAAL KI KHICHRI

Preparation Time :
40 minutes

Cooking Time :
35 minutes

Preparation Method :

  • Wash the rice and lentils together and leave to soak.
  • In a heavy-based saucepan heat the butter and oil together, add in the cloves, peppercorns and cardamoms, stir-fry for a few moments and then add the onions.
  • Fry for about 2 minutes, and then add the turmeric, ginger, garlic and salt.
  • Add lentils and rice and stir, semicircular movements for about a minute to prevent them burning.
  • Add water, bring to the boil, lower the heat and cook for 25 minutes.
  • Leave to stand for about 5 minutes. Mix well.
  • Garnish with coconut scrapings and serve.

INGREDIENTS

  • 400 grams basmati rice
  • 100 grams moong dhaal
  • 100 grams unsalted butter
  • 2 tablespoons Cooking oil
  • 3 cloves
  • 4 black peppercorns
  • 4 green cardamoms
  • 1 medium onion, peeled and chopped
  • ¼ teaspoon turmeric
  • ½ teaspoon diced and crushed ginger root
  • ½ teaspoon crushed garlic
  • 1 teaspoon salt
  • 700 ml water
  • Dry coconut Scrapings for garnishing
