LEMON AND COCONUT RICE

Preparation Time :
15 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Melt ghee in a frying pan and when hot add mustard seeds and wait for them to crackle.
  • Add red chilies, curry leaves, nuts and raisins and saute tor 2 minutes. Add cooked rice and coconut, mix well. Add lemon juice and salt.
  • Heat for 5 minutes or until everything is piping hot.

INGREDIENTS

  • 250 grams cooked Basmati rice
  • 2 tablespoon ghee
  • 1 teaspoon mustard seeds
  • 4 dried red chilies
  • 2 tablespoon curry leaves
  • 1 tablespoon peanuts
  • 1 tablespoon cashew nuts
  • 1 tablespoon raisins
  • 100 grams fresh coconut, grated
  • 1 tablespoon lemon juice
  • Salt to taste
