LEMON AND COCONUT RICE

Preparation Method :
- Melt ghee in a frying pan and when hot add mustard seeds and wait for them to crackle.
- Add red chilies, curry leaves, nuts and raisins and saute tor 2 minutes. Add cooked rice and coconut, mix well. Add lemon juice and salt.
- Heat for 5 minutes or until everything is piping hot.
INGREDIENTS
- 250 grams cooked Basmati rice
- 2 tablespoon ghee
- 1 teaspoon mustard seeds
- 4 dried red chilies
- 2 tablespoon curry leaves
- 1 tablespoon peanuts
- 1 tablespoon cashew nuts
- 1 tablespoon raisins
- 100 grams fresh coconut, grated
- 1 tablespoon lemon juice
- Salt to taste
