Preparation Method :
- Heat the fat in a frying-pan and stir-fry the spices in it. Fry briefly to release the flavors.
- Add the rice with stock and bring to the boil. Cook, covered for about 10-12 minutes or until the rice is cooked.
- Take the pan off the heat and allow it to rest for 8-10 minutes. Stir through before serving.
INGREDIENTS
- 350 ml vegetable stock
- 150 grams basmati rice, rinsed, soaked and drained
- 1 teaspoon oil or butter
- 1 teaspoon whole coriander seeds
- 1 teaspoon whole cumin seeds
- ½ teaspoon whole cardamom seeds
