Preparation Method :
- Wash and drain the rice, set aside. Once the ghee or butter is hot, add in the sliced onions and the seeds. Fry until the onions are golden brown.
- Add the remaining herbs and spices along with the salt lower the heat and stir-fry for about 1 minute.
- Add the rice, blend everything together and stir. Add the water and cover with a tightly fitting lid.
- Lower the heat and simmer for about 20 minutes or until the rice is cooked.
- Serve hot.
INGREDIENTS
- 500 grams basmati rice
- 125 grams ghee or unsalted butter
- 1 medium onion, peeled and sliced
- ¼ teaspoon onion seeds
- ¼ teaspoon mustard seeds
- 2 green chillies, deseeded if desired
- ½ teaspoon ginger root, diced and crushed
- ½ teaspoon garlic, diced and crushed
- 3 or 4 curry leaves
- 2 tablespoons fresh coriander
- 1 teaspoon salt
- 700 ml water
