GREEN LENTILS AND RICE

Preparation Method :

  • Heat the ghee in a large heavy pan with a lid and fry the ginger, garlic, onion, chilies, cloves, cinnamon, cardamoms, turmeric and salt until the onion is soft.
  • Add the spices to the drained rice and lentils, sauté for at least 2 minutes. Add the water and bring to the boil.
  • Reduce the heat, cover and cook until all the water has been absorbed.
  • Take the pan off the heat and leave to rest, covered. Gently toss the mixture with a flat spatula and serve hot.

INGREDIENTS

  • 400 grams Patna rice
  • 200 grams green split lentils 
  • 50 grams ghee
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed 
  • 1 inch piece ginger, shredded 
  • 5 fresh green chilies, chopped
  • 4 cloves
  • 1 in piece cinnamon stick
  • 4 green cardamom pods 
  • 1 teaspoon ground turmeric 
  • Salt, to taste
  • 500 ml water
