Preparation Method :
- Heat the ghee in a large heavy pan with a lid and fry the ginger, garlic, onion, chilies, cloves, cinnamon, cardamoms, turmeric and salt until the onion is soft.
- Add the spices to the drained rice and lentils, sauté for at least 2 minutes. Add the water and bring to the boil.
- Reduce the heat, cover and cook until all the water has been absorbed.
- Take the pan off the heat and leave to rest, covered. Gently toss the mixture with a flat spatula and serve hot.
INGREDIENTS
- 400 grams Patna rice
- 200 grams green split lentils
- 50 grams ghee
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 inch piece ginger, shredded
- 5 fresh green chilies, chopped
- 4 cloves
- 1 in piece cinnamon stick
- 4 green cardamom pods
- 1 teaspoon ground turmeric
- Salt, to taste
- 500 ml water
