GHEE RICE

Preparation Method :

  • Slice the onion thinly to ½ cup of water in a bowl. Add 1 teaspoon of salt to it. Mix well and keep it aside for half an hour. (This reduces the raw taste of onion)
  • Wash the rice well and soak in necessary water for one hour. Drain it and keep it aside.
  • Combine 2 tablespoon of oil and 1 tablespoon of ghee in a pan.
  • Fry the cashew nuts till it turns into golden colour and the raisins till it pops up.
  • Drain it on a kitchen towels.
  • Squeeze out the excess water from onion and deep fry it in the oil till it turns into a deep golden colour and crispy.
  • Drain it on a kitchen towels and keep it aside.
  • Boil 5 cups of water with 4 cardamoms, 4 cloves, 1'' cinnamon stick and 1 bay leaf.
  • Saute the rest of cardamom, clove, cinnamon and bay leaves in 1 tablespoon of butter in a non stick pot.
  • Add finely chopped onion and saute till it turns pink or translucent.
  • Grind the ginger, garlic, green chilli with water to a smooth paste and add it to the pot. Saute for 3-4 minutes.
  • Pour boiled water to it, add salt and 1 tablespoon of butter. Stir well.
  • Add rice and add coconut powder to 1 cup of lukewarm water and stir well and Cook on high flame with the lid open.
  • When the level of rice is just above the water, simmer the flame and add 1 tablespoon of butter. Close the lid.
  • Stir well in between till the rice is cooked properly.
  • Turn off the flame and add some curry leaves. Stir lightly and close the lid.
  • Add a tablespoon of ghee just before serving and mix well.
  • Serve hot into the plate and garnish with the fried onion, cashews and raisins.

  • 600 grams Rice
  • 1 large Onion, finely chopped
  • 10 Cardamoms
  • 10 Cloves
  • 3 pieces of 1 inch Cinnamon sticks
  • 3 Bay leaves
  • 4 tablespoon Coconut powder  
  • 6 ½ cups Water
  • 4 tablespoon Butter
  • 1 tablespoon Ghee  
  • 2 tablespoon IDHAYAM sesame oil
  • 5 Curry leaves
  • Salt to taste
  • 1.5'' Ginger Piece
  • 12 Cloves Garlic  
  • 3 Green Chilly
  • 2 tablespoon Water
  • 1 large Onion
  • 50 grams Cashew nuts
  • 50 grams Raisins
