CHICKEN WITH POTATO RICE

Preparation Method :
- Mix the chicken pieces with ginger, garlic, chillies, biryani masala, coriander, yogurt , tomato puree, onion mint and salt in a large bowl and marinate, for about 2 hours.
- Place in a large heavy pan and cook over a low heat for about 10-12 minutes. Set aside.
- Boil a large pan of water and soak the rice with the cumin seeds, cinnamon stick and green and black cardamom pods for about 5 minutes.
- Drain well. If you prefer, discard some of the whole spices.
- Heat the oil for shallow-frying and fry the potatoes until they are evenly browned on all sides. Drain the potatoes and set aside.
- Place half the rice on top of the chicken in the pan in an even layer.
- Then make an even layer with the potatoes. Put the remaining rice on top of the potatoes and spread to make an even layer.
- Sprinkle the water mixed with milk all over the rice, pour little saffron milk through the rice.
- Place a few knobs ghee or butter on the surface and cook over a low heat for 30 minutes.
INGREDIENTS
- 1.5 kg chicken breast portions, skinned and cut into large pieces
- 4 tablespoon biryani masala paste
- 2 fresh green chillies, chopped
- 1 tablespoon grated fresh root ginger
- 1 tablespoon crushed garlic
- 200 grams fresh coriander (cilantro), chopped
- 6-8 fresh mint leaves, chopped
- 150 grams natural (plain) yogurt, beaten
- 2 tablespoon tomatos puree (paste)
- 4 onions, finely sliced, deep-fried and crushed
- salt, to taste
- 500 grams basmati rice, washed and drained
- 1 teaspoon black cumin seeds
- 5 cm piece cinnamon stick
- 5 green cardamom pods
- 2 black cardamom pods
- IDHAYAM sesame oil, for shallow-frying
- 4 large potatoes, peeled and quartered
- 150 ml milk, mixed with 6 tablespoon water
- 1 sachet saffron powder, mixed with 6 tablespoon milk
- 2 tablespoon ghee or unsalted (sweet) butter
- 1 tomato, sliced
For the garnish
- Ghee or unsalted butter, for shallow-frying
- 100 grams cashew nuts
- 100 grams sultanas (golden raisins)
