Preparation Method :
- In a large pan, heat the oil over medium heat. When hot, sprinkle the granulated sugar over the surface and wait until it has caramelized.
- Add the spices and bay leaf. Let sizzle for 10 seconds, then add the rice and salt. Fry gently, for at least a minute.
- Pour in the water and bring to the boil. Reduce the heat to very low. Cover the pan and cook for 8-10 minutes.
- Remove the rice from the heat and let it stand for some time. Gently fluff up the rice and transfer to a warmed dish to serve.
INGREDIENTS
- 250 grams basmati rice, soaked
- 50 ml Cooking oil
- 4 teaspoon granulated sugar
- 5 green cardamom pods, bruised
- 1 in piece cinnamon stick
- 500 ml Hot water
- 4 cloves
- 1 crumpled bay leaf
- Salt to taste
