BROWN RICE WITH FRUIT & NUTS

Preparation Time :
1 hour

Preparation Method :

  • Heat the ghee or oil in a large saucepan, add the onion and fry gently for 3 minutes. Stir in the garlic, ginger, spices and rice and cook gently for 2 minutes, stirring all the time until the rice is coated in the spiced oil.
  • Pour in the boiling stock and add the canned tomatoes and season with salt and pepper to taste. Bring to the boil, then reduce the heat, cover and simmer gently for 40 minutes or until the rice is almost cooked and most of the liquid is absorbed.
  • Add the slivered apricots or peaches, diced red (bell) pepper and peas. Cover and continue cooking for 10 minutes. Remove from the heat and allow to stand for 5 minutes without uncovering.
  • Peel and slice the bananas. Uncover the rice mixture and fork through to mix the ingredients together. Add the toasted nuts and sliced banana and toss lightly. Transfer to a warm serving platter and garnish with coriander sprigs. Serve hot.

INGREDIENTS

  • 4 tablespoon Cooking oil
  • 1 large onion, peeled and chopped
  • 2 garlic cloves, peeled and crushed
  • 1 inch ginger root, peeled and chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin seeds
  • 1 tablespoon mild or medium curry powder or paste
  • 300 grams brown rice
  • 900 ml boiling vegetable stock
  • 500 grams chopped tomatoes
  • Salt and freshly ground black pepper
  • 175 grams ready- soaked dried apricots or peaches, cut into slivers
  • 1 red(bell) pepper, cored, seeded and diced
  • 100 grams frozen peas
  • 2 small, slightly green bananas
  • 90 grams toasted nuts( a mixture of almonds, cashews and hazelnuts, or pine kernels)
  • Coriander sprigs, to garnish
