Preparation Method :
- Heat the oil in a large pan and fry the onion until it starts to soften.
- Add the rice to the pan and fry for about 10-12 minutes, stir constantly, Finally add the crushed garlic.
- Pour in the stock and stir well. Bring to the boil, Cover and simmer for at least 10 minutes.
- Sprinkle the corn over the rice, spread the chopped pepper on top and sprinkle over the grated carrot. Cover tightly and cook until the rice is tender.
- Transfer on to a serving plate and garnish with coriander sprigs.

- 350 grams basmati rice , soaked for 20 mins
- 45 ml IDHAYAM sesame oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 750 ml vegetable stock
- 125 grams fresh or drained canned corn
- 1 red or green pepper, seeded and chopped
- 1 large carrot, grated
- Fresh coriander sprigs, to garnish
