Preparation Method :
- Heat the oil in a heavy pan, add the cinnamon, bay leaf, black cumin seeds, cardamoms and onion and cook for 1-2 minutes.
- Add the ginger, garlic, turmeric, salt and potato and cook for about 2 minutes.
- Drain the rice and add it to the potato and spices in the pan. Stir well
- Pour in the water .Cover the pan and cook for 10 -20 minutes.
- Remove from the heat and leave to stand, covered, for 5 minutes before serving.
INGREDIENTS
- 350 grams basmati rice, soaked for 20 mins
- 1 tablespoon Cooking oil
- 1 small cinnamon stick
- 1 bay leaf
- ¼ teaspoon black cumin seeds
- 3 green cardamom pods
- 1 medium onion, sliced
- 1 teaspoon grated fresh root ginger
- 1 teaspoon crushed garlic
- ¼ teaspoon ground turmeric
- 2 teaspoon salt
- 1 large potato, roughly diced
- 450 ml water
- 1 tablespoon chopped fresh coriander
