BASMATI RICE WITH POTATO

Preparation Method :

  • Heat the oil in a heavy pan, add the cinnamon, bay leaf, black cumin seeds, cardamoms and onion and cook for 1-2 minutes.
  • Add the ginger, garlic, turmeric, salt and potato and cook for about 2 minutes.
  • Drain the rice and add it to the potato and spices in the pan. Stir well
  • Pour in the water .Cover the pan and cook for 10 -20 minutes.
  • Remove from the heat and leave to stand, covered, for 5 minutes before serving.

INGREDIENTS

  • 350 grams basmati rice, soaked for 20 mins 
  • 1 tablespoon Cooking oil
  • 1 small cinnamon stick 
  • 1 bay leaf
  • ¼ teaspoon black cumin seeds 
  • 3 green cardamom pods 
  • 1 medium onion, sliced 
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon crushed garlic
  • ¼ teaspoon ground turmeric 
  • 2 teaspoon salt 
  • 1 large potato, roughly diced
  • 450 ml water 
  • 1 tablespoon chopped fresh coriander
