ALOO MATAR KI TAHARI

25 minutes

Preparation Method :

  • Wash the rice and set aside. Fry the sliced onion in the ghee or butter until golden brown.
  • Add in the bay leaves and all the spices. Add potatoes and peas and stir-fry over a low heat for about 2-3 minutes.
  • Now add the drained rice and mix everything together. Pour in the water and throw in the fresh coriander.
  • Lower the temperature and cook, covered, for 20 minutes or until the rice is cooked.
  • Serve hot with a refreshing raita.

INGREDIENTS

  • 500 grams basmati rice
  • 2 medium onions, peeled and sliced
  • 5 tablespoons ghee or unsalted butter
  • 2 bay leaves
  • 1 teaspoon ginger root, diced and crushed
  • 1 teaspoon crushed garlic
  • ½ teaspoon turmeric
  • 200 grams  potatoes, peeled and cut into large dice
  • 70 grams  peas
  • 700 ml water
  • 1 tablespoon chopped fresh coriander
