Preparation Method :
- Wash the rice and set aside. Fry the sliced onion in the ghee or butter until golden brown.
- Add in the bay leaves and all the spices. Add potatoes and peas and stir-fry over a low heat for about 2-3 minutes.
- Now add the drained rice and mix everything together. Pour in the water and throw in the fresh coriander.
- Lower the temperature and cook, covered, for 20 minutes or until the rice is cooked.
- Serve hot with a refreshing raita.
INGREDIENTS
- 500 grams basmati rice
- 2 medium onions, peeled and sliced
- 5 tablespoons ghee or unsalted butter
- 2 bay leaves
- 1 teaspoon ginger root, diced and crushed
- 1 teaspoon crushed garlic
- ½ teaspoon turmeric
- 200 grams potatoes, peeled and cut into large dice
- 70 grams peas
- 700 ml water
- 1 tablespoon chopped fresh coriander
