Preparation Method :
- The Spice Powder: In 2 teaspoon oil fry all the ingredients for the spice powder and grind fine. Set aside.
- Pressure-cook the rice and spread on a platter to cool.
- Mix the tomato juice, salt and turmeric powder in a pan and simmer till it thickens. Add the spice powder and mix well. Set aside.
- Heat 2 tablespoon oil and 2 teaspoon ghee and add all the ingredients for tempering.
- When the mustard seeds splutter, add the chopped green chillies and onions and fry for a few minutes till golden.
- Add the rice and the cooked tomato concentrate. Mix well.
- Serve hot with fried appalams or potato wafers.
INGREDIENTS
- 4 large tomatoes, Chopped, blended and Strained
- 150 grams long-grained rice
- Salt to taste
- ½ teaspoon turmeric powder
- 2 green chillies, chopped fine
- 3 medium onions, chopped fine
Spice Powder
- 2 teaspoon Cooking oil
- 6 dry red chillies
- 1 teaspoon black gram dal
- ½ teaspoon fenugreek seeds
- ½ teaspoon asafetida powder
- 2 teaspoon coriander seeds
- 1 tablespoon Bengal gram dal
- 2 tablespoon grated copra
Tempering
- 1 teaspoon mustard seeds
- 2 tablespoon Cooking oil
- 1 tablespoon ghee
- 1 tablespoon peanuts
- A few curry leaves
