Preparation Method :
- Place the rice in a heavy bottomed pan and add water 1 inch above the surface of rice.
- Add salt, ghee and saffron, dissolved in milk. Cover and Cook on high flame for about 1 - 2 minutes.
- Simmer to low flame for about 10 minutes or until the water is absorbed and rice cooked.
- Heat the ghee. Fry the almonds till it turns light golden. Add and fry the sultanas for a few seconds followed by the cloves.
- Pour them over the saffron rice with the ghee. Serve steaming hot.
INGREDIENTS
- 300 grams long grain rice
- 15 - 20 almonds, blanched, skin peeled and slivered
- 20 sultanas
- 1 teaspoon saffron, lightly roasted, crushed and dissolved in 2 tablespoon of warm milk
- 6 cloves
- 3 tablespoon ghee
- Salt, to taste
