ZAFRAAN PILAF

Serves :

Preparation Time :
40 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Place the rice in a heavy bottomed pan and add water 1 inch above the surface of rice.
  • Add salt, ghee and saffron, dissolved in milk. Cover and Cook on high flame for about 1 - 2 minutes.
  • Simmer to low flame for about 10 minutes or until the water is absorbed and rice cooked.
  • Heat the ghee. Fry the almonds till it turns light golden. Add and fry the sultanas for a few seconds followed by the cloves.
  • Pour them over the saffron rice with the ghee. Serve steaming hot.

INGREDIENTS

  • 300 grams long grain rice
  • 15 - 20 almonds, blanched, skin peeled and slivered
  • 20 sultanas
  • 1 teaspoon saffron, lightly roasted, crushed and dissolved in 2 tablespoon of warm milk
  • 6 cloves
  • 3 tablespoon ghee
  • Salt, to taste
