SPICED BASMATI PILAU

- Place the rice in a sieve and wash well under cold running water until the water runs clear. Drain.
- Trim off most of the broccoli stalk and cut into small florets, then quarter the stalk lengthways and cut diagonally into 1 cm / ½ in pieces.
- Heat the oil in a large saucepan, add the onions and broccoli stalks and cook gently for 3 minutes, stirring frequently.
- Add the mushrooms, rice, garlic and spices and cook gently for 1 minute, stirring frequently until the rice is coated in spiced oil.
- Add the boiling stock and season with salt and pepper. Stir in the broccoli florets and return the mixture to the boil.
- Cover, reduce the heat and cook gently for 15 minutes without uncovering.
- Remove from the heat and leave to stand for 5 minutes without uncovering. Add the raisins and pistachios and gently fork through to fluff up the grains. Serve hot.

- 2 large onions, peeled and chopped
- 250 grams mushrooms, wiped and sliced
- 2 garlic cloves, peeled and crushed
- 6 cardamom pods, split
- 6 whole cloves
- 8 black peppercorns
- 1 cinnamon stick or piece of cassia bark
- 1 teaspoon ground turmeric
- 1.25 liters boiling vegetable stock or water
- Salt and freshly ground black pepper
- 60 grams seedless raisins
- 60 grams unsalted pistachios, coarsely chopped
