SPICED BASMATI PILAU

Preparation Time :

Preparation Method :

  • Place the rice in a sieve and wash well under cold running water until the water runs clear. Drain.
  • Trim off most of the broccoli stalk and cut into small florets, then quarter the stalk lengthways and cut diagonally into 1 cm / ½ in pieces.
  • Heat the oil in a large saucepan, add the onions and broccoli stalks and cook gently for 3 minutes, stirring frequently.
  • Add the mushrooms, rice, garlic and spices and cook gently for 1 minute, stirring frequently until the rice is coated in spiced oil.
  • Add the boiling stock and season with salt and pepper. Stir in the broccoli florets and return the mixture to the boil.
  • Cover, reduce the heat and cook gently for 15 minutes without uncovering.
  • Remove from the heat and leave to stand for 5 minutes without uncovering. Add the raisins and pistachios and gently fork through to fluff up the grains. Serve hot.

INGREDIENTS

  • 500 grams  basmati rice
  • 175 grams broccoli , trimmed
  • 6 tablespoon Cooking oil
  • 2 large onions, peeled and chopped
  • 250 grams mushrooms, wiped and sliced
  • 2 garlic cloves, peeled and crushed
  • 6 cardamom pods, split
  • 6 whole cloves
  • 8 black peppercorns
  • 1 cinnamon stick or piece of cassia bark
  • 1 teaspoon ground turmeric
  • 1.25 liters boiling vegetable stock or water
  • Salt and freshly ground black pepper
  • 60 grams seedless raisins
  • 60 grams unsalted pistachios, coarsely chopped
