Preparation Method :
- Mix water and sugar. Add saffron. Keep on heat to boil. Stir in between. Remove from heat soon as syrup boils. Keep aside.
- Heat ghee in a big heavy bottomed pan. Reduce heat. Add green cardamoms and cloves. Stir fry for a few seconds till cardamoms changes colour. Add coconut, almonds and raisins. Stir.
- Discard water and add rice. Mix gently so that the rice grains do not break. Add water Boil Reduce heat. Keep a tawa under the pan of rice as soon as it starts to boil to reduce the heat further.
- Cook covered for about 10 minutes till the water gets absorbed.
- Add the saffron sugar syrup. Mix lightly with a fork. Cover and cook further on low heat for 3-4 minutes till rice is done and the syrup gets absorbed.
INGREDIENTS
- 200 grams basmati rice-must soak for 1 hour
- ¼ teaspoon saffron
- 200 grams sugar
- 3 tablespoon ghee
- 4 green cardamoms
- 3 cloves
- A small piece of fresh or dried coconut-cut into thin pieces, optional
- 8 almonds - blanched and shredded
- 1 tablespoon raisins- soaked in some water
