HARA MASALA PULAO

40 minutes

Preparation Method :

  • Soak the brown rice in water for 2 hours. Drain and set aside.
  • Make the paste by grinding all the paste ingredients together. Set aside.
  • Heat a non-stick pan. Add the cinnamon, cloves, green cardamoms and onion. Cook until light brown, stirring continuously.
  • Add the drained rice and continue to saute for 5               minutes.
  • Add the prepared paste and salt. Stir-fry for 5 minutes.
  • Add the vegetable stock and bring to the boil. Cook, covered, on a low heat until the rice is done. 

INGREDIENTS

  • 500 grams  brown basmati rice
  • 1" stick cinnamon
  • 6 cloves
  • 5 green cardamom pods
  • 2 medium-sized onion, thinly sliced
  • 1 teaspoon salt
  • 1 litre vegetable stock

For the paste:

  • 100 grams fresh coriander leaves, chopped
  • 10 garlic cloves, chopped
  • 5cm piece root ginger, chopped
  • 4 green chillies, chopped
