COCONUT PILAF

Serves :

Preparation Time :
10 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Melt ghee in large frying pan; add onion. Stir until onion is soft.
  • Stir in the seeds, cinnamon with cardamom, cloves and turmeric; stir over medium heat for 1-2 minutes.
  • Stir in rice for further 1 more minute. Stir in coconut cream and the water, bring to boil.
  • Simmer to low flame, cook, covered for about 15-20 minutes or until all liquid is absorbed and rice is tender.
  • Remove and discard cinnamon stick. Stir through nuts and currants. Stir before serving.

INGREDIENTS

  • 250 grams basmati rice  
  • 350 grams coconut cream
  • 100 ml water
  • 220 grams brown onions, sliced
  • 50 grams ghee
  • 1 teaspoon cumin seeds
  • 1 cinnamon stick
  • 4 cardamom pods, bruised
  • 4 whole cloves
  • ½ teaspoon turmeric
  • 75 grams pistachios, toasted, chopped coarsely
  • Salt, to taste
  • 30 grams golden raisins
