COCONUT PILAF

Preparation Method :
- Melt ghee in large frying pan; add onion. Stir until onion is soft.
- Stir in the seeds, cinnamon with cardamom, cloves and turmeric; stir over medium heat for 1-2 minutes.
- Stir in rice for further 1 more minute. Stir in coconut cream and the water, bring to boil.
- Simmer to low flame, cook, covered for about 15-20 minutes or until all liquid is absorbed and rice is tender.
- Remove and discard cinnamon stick. Stir through nuts and currants. Stir before serving.

- 250 grams basmati rice
- 350 grams coconut cream
- 100 ml water
- 220 grams brown onions, sliced
- 50 grams ghee
- 1 teaspoon cumin seeds
- 1 cinnamon stick
- 4 cardamom pods, bruised
- 4 whole cloves
- ½ teaspoon turmeric
- 75 grams pistachios, toasted, chopped coarsely
- Salt, to taste
- 30 grams golden raisins
