TENDER MANGO PICKLE (VADU MAANGA)

Makes :
2 Jars

Preparation Time :
20 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Wash Tender mangoes (Baby Mangoes / Vadu Maanga) and dry them with a clean cloth; mix Sesame oil well in this so that each mango is coated with oil.
  • Boil 2 cups water put in the chilli powder, turmeric powder and salt.
  • Remove from fire. Let it get cold.
  • Fry the mustard in a kadai / pan without oil and grind it to a fine powder.
  • Add this to the boiled salt water. Add chilli powder, turmeric powder and tender mangoes also and mix well. Let them soak for 3 to 4 days. It will be ready.
  • Since mango is a seasonal crop. This pickle is made in large quantities during the season and preserved in jars.
  • So sesame oil is used as a preservative.

INGREDIENTS

  • 2 kg Tender Mangoes
  • 200 grams powdered salt
  • 2 teaspoons chilli powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons mustard seeds
  • 50 ml sesame oil
