Preparation Method :
- Cut the mangoes including the hard seed and make at least 16- 20 pieces per mango.
- Wash the mango pieces and spread on a cloth to dry for about an hour in the sun.
- Dry roast the cumin seeds and powder fine.
- Mix the salt, chilli powder and mustard seeds in a large pan.
- Heat the oil and cool completely. Mix in the salt- chilli powder-mustard seeds mixture, take care that there are no lumps. Stir in the mangoes.
- Add the cumin seeds, fenugreek seeds, asafoetida and turmeric powder. Mix well.
- Store in an airtight jar. Turn the pickle well on alternate days.
