GRATED MANGO PICKLE(MANGAI THOKKU)

Preparation Method :
- Dry roast the fenugreek seeds and asafoetida powder. Powder fine and set aside.
- Heat the oil and add the mustard seeds. When they splutter, add the chilli powder and turmeric powder and sauté for a minute.
- Add the mango, salt and fenugreek-asafoetida powder. Cook till the oil seperates.
- Cool completely and store in a bottle.
INGREDIENTS
- 1 kg green mangoes, Peeled and grated
- 1 teaspoon fenugreek seeds
- 1 teaspoon asafoetida powder
- 50 grams chilli powder
- ½ teaspoon turmeric powder
- 75 grams salt
- 100 ml Gingelly oil
- 2 teaspoon mustard seeds
