Preparation Method :
- Wash the ginger, peel the skin and chop it finely.
- Heat oil in a pan, add chopped ginger and dry red chili stir fry for 1-2 minutes and switch off the flame.
- Grind the Ginger, Red Chili and Tamarind to coarse paste.
- Heat a pan, Pour oil, add mustard seeds and wait till it splutters and add urad dal, curry leaves and fry till turns golden brown.
- Add Ginger Paste and Salt and cook on medium flame for 3 minutes.
- Add jaggery and cook for another 2 minutes.
- Remove from flame.
- Cool it and store in a jar.

- 300 grams Ginger
- 15 pieces of Dry Red Chili
- 1 large sized Tamarind
- 3 tablespoons Palm Jaggery
- Salt to taste
Tempering:
- 1 teaspoon Mustard seeds
- 1 teaspoon Urad dal
- 1 sprig of Curry leaves
- 100 ml Sesame Oil
