Preparation Method :
- Cut the citron to desired size and put them in a broad bowl. (Don't use stainless steel).
- Take the juice from the lemon.
- Put in the salt, lime juice and mix well.
- Tie the mouth of the bowl with the cloth and keep it under the sun.
- Keep it for 5 to 6 days. Check whether the citron pieces or well soaked in salt and become soft.
- Add the chilli powder and asafoetida powder.
- Heat a kadai without oil and put in the 2 teaspoons mustard seeds and fenugreek.
- Fry them to brown colour and grind to a fine powder.
- Add these to citron pieces.
- Heat the kadai with oil. Transfer with the mustard seeds and pour this to the citron pieces. Mix well. The citron pickle is ready.
