BEEF PICKLE

Preparation Method :
- Cook the beef with 3 tablespoon lime juice, salt and turmeric powder in a pan till tender.
- In a dry skillet add all the masala ingredients and roast till you smell the aroma. Simmer on to low heat, stirring to avoid burning.
- Remove and let it cool to room temperature and transfer to a Food Processor. All the contents should be ground to a powder .
- Temper the mustard seeds and curry leaves with the oil in a pan on medium heat.
- Add finely chopped garlic, ginger and onion in the oil and stir till golden brown.
- Add the prepared masala and stir by adding sugar, until the colour appears. Add the red chilli powder and mix well till oil seperates.
- Once the masala is ready, reduce the heat and add the beef. Mix throughly and add the vinegar.
- Make sure that the beef is submerged in vinegar. Cook for few minutes on low heat.

- 1 kg Beef (boneless and diced as cubes)
- 220 ml Sesame oil
- 220 ml White synthetic vinegar
- 220 ml Lime juice
- 2 tablespoon Kashmiri chilli powder
- 150 grams finely chopped Onion
- 50 grams Garlic
- 1 teaspoon chopped Ginger
- 6 slit Green chilies
- 2 teaspoon Turmeric powder
- 1 teaspoon Sugar
- 50 grams Dry red chilli, whole
- 50 grams Coriander seeds
- 2 teaspoons Black Cumin Seeds
- 2 teaspoons cumin Seeds
- 1 teaspoon Black pepper
- 2 teaspoons Fennel seeds
- 2 teaspoons Black Pepper
- 1 teaspoon Mustard seeds
- Salt to taste
- Handful Curry leaves
