BEEF PICKLE

Makes :
1 Large Jar

Preparation Time :
45 minutes

Cooking Time :
50 minutes

Preparation Method :

  • Cook the beef with 3 tablespoon lime juice, salt and turmeric powder in a pan till tender.
  • In a dry skillet add all the masala ingredients and roast till you smell the aroma. Simmer on to low heat, stirring to avoid burning.
  • Remove and let it cool to room temperature and transfer to a Food Processor. All the contents should be ground to a powder .
  • Temper the mustard seeds and curry leaves with the oil in a pan on medium heat.
  • Add finely chopped garlic, ginger and onion in the oil and stir till golden brown.
  • Add the prepared masala and stir by adding sugar, until the colour appears. Add the red chilli powder and mix well till oil seperates.
  • Once the masala is ready, reduce the heat and add the beef. Mix throughly and add the vinegar.
  • Make sure that the beef is submerged in vinegar. Cook for few minutes on low heat.

INGREDIENTS

  • 1 kg Beef (boneless and diced as cubes)
  • 220 ml Sesame oil
  • 220 ml White synthetic vinegar
  • 220 ml Lime juice
  • 2 tablespoon Kashmiri chilli powder  
  • 150 grams finely chopped Onion
  • 50 grams Garlic
  • 1 teaspoon chopped Ginger
  • 6 slit Green chilies
  • 2 teaspoon Turmeric powder
  • 1 teaspoon Sugar
  • 50 grams Dry red chilli, whole
  • 50 grams Coriander seeds    
  • 2 teaspoons Black Cumin Seeds
  • 2 teaspoons cumin Seeds    
  • 1 teaspoon Black pepper    
  • 2 teaspoons Fennel seeds    
  • 2 teaspoons Black Pepper    
  • 1 teaspoon Mustard seeds
  • Salt to taste
  • Handful Curry leaves
