Preparation Method :
- Place the cubed aubergine in a colander, sprinkle over the salt and set aside for half an hour.
- Heat the oil in a large, heavy-based frying pan, add the turmeric, cumin, ground coriander, split mustard seeds and chilli powder, fry for about 2-3 minutes or until fragrant.
- Add the ginger, garlic and chillies stir well. Simmer for 3-5 minutes, stirring occasionally.
- Add the drained aubergine cubes and the sugar to the pan. Mix well and cook over a moderate heat, stirring occasionally.
- Cook for about 20-25 minutes or until the aubergine is very soft and all the flavours are well combined.
- Ladle the aubergine pickle into sterilized jars.

- 100 ml IDHAYAM sesame oil
- ½ teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon split mustard seeds
- 2 inch piece fresh root ginger, grated
- 4-5 garlic cloves, crushed
- 3-4 red chillies, deseeded and thinly sliced
- 3-4 green chillies, deseeded and thinly sliced
- 90 grams soft brown sugar
- Chilli powder and salt, to taste
