Preparation Method :
- Dry roast the asafoetida powder and fenugreek seeds. Powder and set aside.
- Heat the oil and add the mustard seeds, turmeric powder, and chilli powder. Sauté for about 2 minutes.
- Mix in the amla, salt and the fenugreek-asafoetida powder. Mix well. Remove from the heat, make sure not to overcook.
- Cool completely. Store in an airtight bottle.

- 100 grams small amla, deseeded and chopped
- 40 grams salt
- 85 ml IDHAYAM sesame oil
- 2 tablespoon chilli powder
- ½ teaspoon asafoetida powder
- 1 teaspoon fenugreek seeds
- 2 teaspoon mustard seeds
- ½ teaspoon turmeric powder
