STUFFED PANEER STEAKS

25 minutes

Preparation Method :

  • Sprinkle salt & freshly ground pepper on both sides of paneer and keep aside.
  • Filling : Heat butter. Stir fry onion for 2 minutes. Add beans, carrots, salt, pepper, oregano, grated cheese and stir for 1 minute. Cook until soft, remove from heat and keep it aside to cool.
  • Take a piece of paneer. Spread 1 teaspoon of the filling on it. Press another piece of paneer on it. Turn and press the other side also. Keep aside.
  • Tomato Relish: Pierce a tomato with a fork and hold it over the naked flame to roast it till the skin turns blackish and charred. Roast all the tomatoes like this. Cool and peel.
  • Chop 2 tomatoes and puree the other 3 tomatoes.
  • Heat oil and saute onion and green chilies till onion turns soft. Add all other ingredients and cook for just 2 minutes. Remove from fire. Keep aside.
  • While serving, heat ½ tablespoon butter in a pan on medium heat. Dip the stuffed steak in the prepared batter to coat all sides and put in the pan. Cook 4 pieces at a time.
  • Reduce heat after 2 minutes when the edges start changing colour. Turn the side gently with a knife or a flat spoon. Cook till browned on both sides.
  • Serve hot with tomato relish.

INGREDIENTS

  • 400 grams paneer - cut into squares

Filling

  • ½ cube cheese - grated finely
  • 6 french beans - cut into paper thin slices
  • 50 grams finely grated carrot
  • ¼ teaspoon salt
  • ¼ teaspoon oregano
  • Pepper to taste
  • ½ tablespoon butter
  • 1 tablespoon grated onion

Batter, mix all the ingredients

  • 3 tablespoons plain flour (maida)
  • 75 ml plus milk
  • 2 pinches of turmeric (haldi)
  • ¼ teaspoon salt
  • ¼  teaspoon red chili powder
  • 2 tablespoons very finely grated cheese

Tomato Relish

  • 5 tomatoes - roasted
  • 2 onions - chopped finely
  • 2 green chilies - chopped
  • 2 tablespoons chopped coriander
  • 1 tablespoon Cooking oil
  • 1 teaspoon vinegar
  • ½ teaspoon salt and
  • Pepper to taste
